I made this last night and it was yummy! I totally forgot the Italian seasoning but didn’t miss it. I used great northern beans last night, but cannellini will work, too.
In a stock/soup pot, heat olive oil over medium heat. Add garlic and onion; saute until soft. Stir in broth, carrots, beans, and seasonings. Bring to a boil, then reduce heat and cook until carrots are almost tender, about 15 minutes, stirring occasionally. Add kale; cover and simmer for another 15 minutes or until kale is done, stirring occasionally.
