Hello! What’s up? Plus…Slow Cooker Pork Tenderloin/Chops

Howdy!

Long time, no post…I know. I wax experiencing technical difficulties. I think I have it figured out now.

Today, I have two Crock Pots going using the recipe below. I have a tenderloin in one and chops in the other. One is for us and one is to share.

Here’s the recipe:

FYI:  I LOVE my Crock-Pot Slow Cookers! 

  • 3-4 pounds pork tenderloin
  • 1⁄2 medium onion thinly sliced
  • 1 tablespoon canola oil
  • 1 teaspoon lemon juice
  • 2-3 cloves garlic
  • 1⁄4 cup soy sauce
  • 3⁄4 teaspoon ground ginger
  • 1⁄4 cup white wine
  • 1⁄4 cup honey
  • 1 tablespoon brown sugar
  • 1⁄4 cup water

Pour water into bottom of slow cooker. Place tenderloin in cooker; lay sliced onions on top. Mix together remaining ingredients in bowl and pour over meat. Cook on low for 7-8 hours.
To be served tonight with mashed potatoes, sautéed zucchini and yellow squash, and yeast rolls. 
The house is smelling good!

I also got my sheets washed and out on the clothesline this morning. I love the smell of freshly air-dried sheets! ❤️ Unfortunately, they didn’t get completely dry before the thunder started, but hopefully they were out there long enough to get the good smell!


And right now, I’m doing some front porch sittin’ while it’s not quite as hot as it has been this week.

But my time is about up because I’ve got to get the rest of supper cooked so it can be delivered.

The Joy (Ha!) of Budgeting

So…a new year starts on Saturday and with that, a new budget. Budgeting is so much fun. (Insert eye roll here.) So that’s what I’ve been working on today. Fun times, fun times.
 
I love when I look at the budget and I’ve stuck to it. When I look at it and overspent on groceries (usually the place where I overspend), not so much.
 
But it is what it is. And I’m working diligently – with the aid of coffee – to get the new one ready by January’s first paycheck. Some adjustments had to be made in our utilities since our son moved back home (imagine that!) but today I cancelled a couple of magazine subscriptions because I wasn’t a big fan of those particular ones anyway; cancelled Sirius XM radio; and we’d already done a bill combination thing with our satellite and cell phone service that saved us some money. (Supposedly. Hubby did that and I haven’t seen the bill to prove it yet, so we’ll see. Next week, in fact.)
 
In light of the rising cost of eating well, I think I’ll work harder on my garden this year. Like, really hard. Don’t tell Hubby, but the whole back yard might turn into a garden. And there are enough flower beds back there that can be moved so we can re-landscape the front yard without buying plants.
 
We had been doing so good since we took Dave Ramsey’s FPU last year, but the last couple of months, I’ll admit that we’ve been lax. Remiss. Budget? What’s that? And now it’s time to buckle down.
 
We’ve got a 25th wedding anniversary coming up in July. I think a really nice trip is in order. So getting the finances back in order is the first step.

Living Room Redo

And the DIY, budget, use what you’ve got house redo continues. Finished painting the living room. Mantle “staged” with favorite things…bird plates, old books, bird candle holders…

So, happy Saturday!

I did not have a super productive week around the house. In fact, I may have just enjoyed being lazy a bit TOO much. 🙂 I read four (yes, four) books, lazed in the hammock, and just generally got some rest. It was awesome. And it really is hard to do too much when your husband is on nights and sleeping during the day. It seems that the quieter I try to be, the louder I am. And much more likely to drop stuff.

So today I’m staying close to home and this is what’s going on right now:

1. I have a leftover rotisserie chicken simmering with some onions, carrots, and seasonings to make some yummy homemade chicken stock.

2. I have a pan of granola baking in the oven for yogurt parfaits and breakfast cereal.

3. I have ground beef thawing to my hubby chow mien casserole for dinner before he heads to work tonight. (Recipe to follow in notes. It’s something my mom made when we were growing up and he asked for it, so…)

4. I’m about to make him some no bake chocolate oatmeal cookies to share at work tonight. They’re his favorite and I don’t make them often because while all the ingredients are whole foods, he really doesn’t need to eat them all. 🙂 But, man, are they good cold!

5. I’m menu planning for the month of June. I will at least finish with the first week. I’m also trying to write blog posts for the coming week. (I can be pretty quiet when I’m sitting here on the computer. I probably won’t wake the sleeping one.)

And I may or may not be drinking coffee as I’m doing these things. 😉 Y’all know I love my coffee. And wishing I was at the beach…

What’s going on and where I’ve been…

So I’m recovering from my Alabama trip – had to go to physical therapy for my back today and it’s feeling much better. 

Have a race on Saturday – 5k…not ready for a half marathon just yet, but hoping to do one in December.

Really hoping to be be back to our “normal” next week. FYI, one can have a laundry schedule for years and leave for three days and it’s like it never existed. Just saying. 😳

Dinner is served! And what a week!

Hi, all!

What a crazy, hectic week it’s been! Some highs, some lows…but mostly just busy. 

So my menu plan for the week got a little waylaid. I’ll re-plan it for next week. When in doubt, make breakfast for dinner. That’s what I did tonight: grits, scrambled eggs, bacon, and homemade biscuits. Always a winner. 🙂
